Our friends over at Gardening With Children have a warm and hearty soup to share with us today. This soup would make a great way to relax and warm up after a long day. The best part is that it’s quick and easy. No fancy cooking skills involved!
Italian Orzo Spinach Soup

- 2 TBL Olive oil
- 1 Onion, diced
- 1 cup Celery, diced
- 1 cup Carrots, diced
- 3 cloves Garlic, chopped
- 6 cups Vegetable stock
- 1 Can of Fire Roasted Tomatoes
- 4 cups Spinach
- 1 1/2 cups wheat Pasta
- Spices – Oregano, Thyme, Rosemary, Salt and Pepper
- Cutting board
- Heat the oil to medium. Add onions and saute for 4 minutes. Add carrots, celery and garlic and saute for an additional 3 minutes.
- Add everything except the spinach. Bring soup to a simmer.
- Reduce heat to medium-low and simmer for 10 minutes, stirring occasionally, until the pasta is al dente.
- Stir in the spinach and cook for 1-2 minutes until it is bright green and wilted. Season with salt and black pepper to taste (if needed).
It might become more obvious as I continue to share these recipes with you, but I have a hard time following recipes exactly as printed. I find a recipe I want to make and I get all sorts of ideas in my head on how I can tweak it! For example with this recipe I wanted to make it more hearty to appease my husband, so I added in a cup of uncooked green lentils. I also wanted to appeal to my daughter more so I used alphabet letter pasta instead of orzo. I’m lucky to have a child that eats any vegetables I give her, but it never hurts to make food fun!
